Medium Roast Coffee

All coffee beans are harvested as coffee cherries.  The cherry normally contains two coffee beans. The cherry fruit is not used and must be removed.  The coffee beans are dried either by air drying or by heating. Once dried, sorted and graded they are sold by the farmer to a wholesaler.  Coffee roasters buy the green coffee beans from wholesalers.  They then determine the type of roast they think the beans will be most flavorful.

Many coffee drinkers like a medium roast coffee.  Darker roasting burns up some of the sugars and releases the coffee oils. Some coffee beans will not produce a good flavor if roasted for too long. The burnt taste is more pronounced the darker the roast. Some call a medium roast a city roast or half city roast for lighter roasting.

Each coffee drinker has their preferred roasting grade but a good place to start is a medium roast coffee.
